Spicy Blueberry Mango Salsa In 3 Delicious Ways #BCBlueberries

A summertime family tradition of blueberry picking is a favourite among many B.C. residents – and it’s no wonder since our province is practically bursting with blueberries right now! Foodies all over social media are talking about these sweet balls of antioxidants and asking each other: What’s your favourite way to eat BC blueberries? Today I’m sharing a quick and easy Blueberry Mango Salsa (with a kick!) that is perfect for that summer BBQ. You don’t have to worry about calorie content the way you might with other party foods; BC blueberries are low in calories and high in Vitamins A, C and E. Add a cup of these berries to your diet every day and stave off or treat diabetes, heart disease, stroke, Alzheimer’s and Parkinson’s disease!

Many of my South Asian friends have memories of being in the fields as children, alongside their parents and grandparents picking blueberries at work. There’s a lot that happens when multi-generations gather in natural spaces. A lot of learning, talking, and even golden silence. We’re lucky here in B.C. to have these experiences available to us.

Spicy Blueberry Mango Salsa Recipe

The naturally sweet blueberry pairs well in this particular recipe with the heat of hot peppers and tang of lime. Your mouth will sing whichever way you serve this condiment. And because BC blueberries are so easy to freeze, you can bring a taste of summer to your table all year-round!

It’s not a finicky recipe, so all these measurements can be adjusted to your taste. If you don’t want it to be spicy at all, then simply leave out the hot pepper.

Here’s how I created a spicy Blueberry Mango Salsa and the 3 delicious ways I served it:

Ingredients:

2 cups BC blueberries

1 mango, peeled and diced

1 red pepper, diced

1 hot pepper, seeded and finely chopped

1/4 cup corn kernels (I used peaches and cream corn)

4 sprigs green onion

1 lime, juiced

salt and ground cumin to taste

cilantro, chopped (garnish)

Directions:

Add first 6 ingredients to a bowl and stir to mix. Stir in salt and cumin to lime juice and add to mixture. Stir to evenly coat. Garnish with cilantro. Chill and serve.

    Once I’ve made the quick morning french toast in the pan, pull the toast and toss in the 1/2 cup of blueberries and 2 tablespoons of agave syrup and let it quick boil for 2 minutes in the hot buttery pan! Use a lid to keep the splatter and clean up to a minimum
    Oh! French toast is two eggs, s&p, plus one tablespoon of milk all whisked, to thoroughly soak two slices of your favourite day old bread.
